Street Tacos

Couldn’t leave San Diego without giving you a classic Street Taco recipe. Now look, I’m not Mexican (although would love to date one at some point in my life with a big family that loves to cook) BUT I grew up eating street tacos in Tijuana (no wonder I have such a strong stomach) and this is the way they serve up their street tacos. Super simple, no crazy toppings, just a few super fresh ingredients. So delicious!

Ingredients

Pollo Asado

2 lbs chicken thighs
1 tbsp avocado oil
1 tsp salt & pepper
1 tsp paprika
1/2 tsp cumin
1/2 tsp cayenne
1/2 tsp red pepper flakes
2 tsp soy sauce
2 tbsp fresh cilantro
2 tbsp parsley
1 lime

Tacos

corn tortilla
guacamole
raw diced white onion
lime
salsa

Instructions

Pollo Asado

Buy premade from Trader Joe’s OR make your own. Add chicken thighs to a Tupperware or plastic bag and add the following: avocado oil, salt & pepper, paprika, cumin, cayenne, red pepper flakes, soy sauce, fresh cilantro, parsley and the juice from a lime. Marinate for 1 hour or overnight.
Grill or cook over medium heat on the stove.

Tacos

Use small corn tortillas and heat them in a hot pan with a little oil.
Add diced pollo asado, a dollop of guacamole, raw diced white onion, cilantro, a squeeze of lime and some salsa.
