Spanish Cauliflower Rice

I wanted it all tonight and since I finally had more than 3 hours of free time, I made it all! Been super busy lately, which is the way I prefer to be, but not going to lie spending the day in the kitchen made me real happy. Made my shredded salsa verde chicken with some Spanish cauliflower rice, homemade Pico de Gallo, crispy sweet potatoes, avocado and a little crunchy side salad.
