Peaches & Greens Salad

Created this Peaches & Greens Salad in collaboration with @eatalfalfa so if you’re near the Santa Monica or Hoboken you have the option to make it at home or go and pick one up 🍑 Either way, it’s a summer staple! I love adding grilled chicken as well. It doubles as a #lowcarblunch too!!

Peaches & Greens Salad

Ingredients

2 cups mixed greens
1 cup chopped kale stems removed
1 ripe peach chopped
1 ripe avocado sliced
3 tbsp fresh basil chopped
1/3 cup candied pecans
2 oz prosciutto chopped
1/2 cup fresh mozzarella cheese chopped in small cubes

Balsamic dressing:

1/3 cup olive oil
1/4 cup balsamic vinegar
2 tsp honey
1/2 tsp Dijon mustard
Pinch of salt & pepper

Instructions

Whisk together all ingredients for the dressing.
In a large bowl, add all of the ingredients for the salad except the avocado.
Toss with the dressing and top each salad with 1/2 an avocado, salt and pepper.
