Mediterranean Chicken Bowls

One of my all time favorite weeknight dinners: Mediterranean-Style Chicken Bowls. Inspired by everyone’s favorite fast casual restaurant, Cava, these bowls recently got a major upgrade when I mastered their Crazy Feta recipe. Add it to the weeknight rotation, you really can’t go wrong! 💙

Ingredients

Chicken Marinade:

1 1/2 lb chicken breasts
3 tbsp olive oil plus more to cook
Juice from 1/2 lemon
2 cloves garlic minced
1 tbsp honey
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp kosher salt
1/4 tsp black pepper

Greek dressing:

1/3 cup extra virgin olive oil
3 tbsp red wine vinegar
Juice from ½ lemon
1 tsp dijon mustard
½ tsp dried oregano
¼ tsp kosher salt & pepper

For the bowl:

Mixed greens
White rice
Kalamata olives
Pickled onions recipe on my blog
Diced cucumbers & tomatoes
Feta cheese or my Crazy Feta Recipe
Hummus
Tzatziki
Pita bread

Instructions

Combine all ingredients for chicken marinade and pour over the chicken in either a Tupperware or plastic bag. Refrigerate for at least an hour, preferably overnight.
Heat about 1-2 tbsp of olive oil in a skillet over medium heat.
Cook the chicken for 4-5 minutes each side until cooked through. I like to chop it into bite sized pieces and then give it a toss back in the pan for 1-2 minutes to get crispy.
Make the dressing and toss your greens (about a handful per bowthen top with rice, chicken, and the remaining toppings. I like to add another drizzle of Greek dressing on top as well.
