Grilled Chipotle Chicken Sandwich

Ingredients

Grilled Chipotle Chicken:

1 1/2 lb chicken breasts
1/2 cup mayonnaise
1 chipotle pepper in adobo sauce
Juice from 1 lime

Sandwiches:

4 toasted hamburger buns or bread of choice
4 slices of sharp cheddar cheese
Shredded lettuce
Tomato

Instructions

Using an immersion or regular blender, blend together mayonnaise, chipotle pepper, and lime juice until smooth. Reserve a few tablespoons to add to your buns- the rest will be the chicken marinade.
Add the chicken to a Tupperware and pour the mayonnaise mixture on top. Close the lid and shake to coat the chicken. Refrigerate for at least an hour, up to over night.
When you’re ready to cook the chicken, heat the grill over medium high heat. Cook for about 3-4 minutes each side or until cooked through, depending on the thickness of your chicken breast. Add the cheese for the last minute to melt.
Assemble your sandwiches to your liking and enjoy!
