Greek-Style Burgers with Tzatziki & Greek Lemon Potatoes

Damn, I love a good burger. Makes sense that it’s the first meal I cooked in my NEW APARTMENT 🤩 Finally settling in here in LA and I’m kinda like wtf did I just do where am I?! But hopefully this week and the start of my new routine will get me feeling better. Getting my booty back in the kitchen sure did help a lot too! Try this one ASAP!

Greek-Style Burgers with Tzatziki & Greek Lemon Potatoes

Ingredients

Burger

1 lb organic, grass fed beef
1/3 cup minced red onion
2 cloves minced or crushed garlic
2 tbsp fresh parsley
1 tbsp fresh dill
1 tsp salt
1 tsp lemon pepper
1/2 tsp dried oregano
tzatziki to serve
lettuce, cucumber, red onion to serve

Greek Lemon Potatoes

3 russet potatoes
1/3 cup olive oil
1/2 cup chicken broth
juice from 2 lemons
4 cloves minced or crushed garlic
1 tsp salt
1/2 tsp oregano

Instructions

Burgers

Combine organic, grass fed beef, egg, red onion, garlic, fresh parsley, fresh dill, salt, lemon pepper, & dried oregano. Form patties and add to a hot cast iron pan over medium heat.
Cook for 3-4 minutes each side. Serve in a lettuce wrap with tomatoes, cucumber, red onion, avocado and tzatziki.

Greek Lemon Potatoes

Cut potatoes in wedges and coat with the following mixture on a baking pan: olive oil, chicken broth, lemon juice, garlic, salt and oregano.
Bake at 400 for about 45 minutes, stirring every 15 minutes. Finish on broil until potatoes are crispy!
