Brb diving into this fry pile… Made some extra crispy sweet potato fries tonight and I’m ready to dip these babies in some ketchup and ranch baby. These are perfect for a side or snack and warning: they are highly addicting!!!

Crispy Sweet Potato Fries

Ingredients

3 medium sweet potatoes
2 tbsp avocado oil
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp chili powder
1 tsp oregano
1/4 cup Parmesan cheese

Instructions

Preheat oven to 425 degrees. Slice the ends of sweet potatoes then cut potatoes in half length wise, then into smaller long “fries.” Toss the sliced sweet potato in avocado oil, salt, pepper, garlic powder, oregano and chili powder. Lay the sweet potatoes in one layer (not over lapping) on the baking tray and bake in oven for 20 minutes, then flip and bake for another 20 minutes. Broil on high for 2 minutes then remove from the oven. Once cooled for about 5 minutes, toss in grated Parmesan cheese.
