Why am I just now hearing about cabbage rolls?! I heard about them yesterday morning and decided I NEEDED to make a healthy, @whole30 version of them. I have no idea if I completely butchered this recipe or not but they tasted so damn good and made great leftovers for lunch today! You gotta try – Chicken & Cauliflower Rice Whole30 Cabbage Rolls.

Ingredients

1 head green cabbage
1 lb ground chicken
1 egg
1 tbsp fresh basil
1 tbsp Italian seasoning, salt & pepper
1/2 white onion diced
3-4 cloves garlic minced
1 tbsp olive oil
1 cup cauliflower rice
1 14 oz can chopped tomatoes
1 16 oz jar Rao's Homemade Tomato Sauce
1 14 oz can Whole30 compliant tomato soup

Instructions

Preheat oven to 375 degrees.
Start by boiling a large pot of water. Add in your head of green cabbage with about 1/4 inch of the bottom cut off. Cook for about 2 minutes, peel off the leaves and add back in the water once the leaves are tough to pull off. Repeat until all the leaves are peeled off the head of cabbage.
For the stuffing, combine 1 lb ground chicken, 1 egg, 1 tbsp fresh basil, 1 tbsp Italian seasoning, and 1 tsp salt & pepper. In a medium skillet, add 1/2 white onion (diced) and 3-4 cloves minced garlic to 1 tbsp olive oil over medium heat. Add in 1 cup of cauliflower rice (you can use cooked white or brown rice if you are not Whole30 but add it in at the end once chicken is cooked). Cook for 5 minutes then add in chicken mixture and break it up with a wooden spoon or spatula. Once the chicken is cooked, add 1 can of chopped tomatoes and 1/2 cup of @raoshomemade tomato sauce.
Combine the rest of the tomato sauce (16 oz jar) and one 14 oz can of Whole30 compliant tomato soup. Add a little to a large baking dish to fully coat the bottom of the dish.
Add about 1/3 cup of the mixture to the center of one cabbage leaf and then roll up the leaf, tuck the top and bottom and place seam side down.
Top with the sauce and soup mixture and bake for 45 minutes to 1 hour. Top with fresh basil and serve!
