Jalapeno Cheddar Tuna Melt

Bless you Jalapeño Tuna Melt, for being so easy to make, delicious and photogenic 💕 I haven’t always been friends with canned tuna. My mom would only buy and cook the freshest seafood and she instilled in my brain that if it’s frozen or in a can, it is NOT good enough for the Stanton Fam. I love you mom but jeeeez have you ever had a tuna melt???? It’s insane. Especially when you add crunchy jalapeños and sharp cheddar 🤤

I also noticed that there’s TONS of canned tuna at the grocery store so I’m sure you can easily whip this together! It’s also easily modifiable, you only really need the tuna and mayo (or sub avocado) to make it work!

Jalapeno Cheddar Tuna Melt

SERVES: 2 servings

Ingredients

TUNA SALAD:

2 6 oz cans of tuna
3 tbsp avocado oil mayo
2 tbsp celery minced
1 1/2 tbsp red onion minced
1 tbsp jalapeno minced (optional)
1 tsp dijon mustard
1 tsp sweet relish
salt & pepper

TUNA MELT:

2 slices sourdough bread lightly toasted (4 if you don’t want it open faced)
1 tomato cut into slices
2 slices cheddar cheese
jalapeño slices optional
everything but the bagel seasoning

Instructions

Combine all ingredients for the tuna salad in a medium bowl. Add half of the mixture to each piece of bread.
Top with tomatoes, jalapeños and cheese.
Broil for 3-5 minutes or until cheese is melted. Top with fresh dill and everything but the bagel seasoning!
