Brocc’s Best Soups
Winter in LA seems to be on its way out, but before I say goodbye to the cozy weather, I plan on taking full advantage and making my most favorite soup recipes. Some of you like to call me the Soup Queen, and I do not take that title lightly. I have spent so much time creating a wide variety of soup recipes for you all because who doesn’t love a big bowl of soup? It is one of my favorite things to make because it is so easy to throw in a ton of veggies and it is also perfect for meal prep.
Hope you enjoy this round up and don’t forget to tag me in your creations!
Definitely a favorite. I could eat this soup every single day! There’s something so special about the baby meatballs, orzo and the brightness of the lemon with the fresh parmesan cheese. YUM!
If you are in a spicy mood, this is the soup for you. And the potstickers!!! So insanely good.
Matzo ball soup CURES ALL. This is my ultimate comfort food and it is probably the easiest soup to make on this list.
Tomato soup has no business being so good. I don’t know how such a simple recipe can be so damn delicious, but WOW. This is the only tomato soup recipe you will ever need. The baby grilled cheese croutons on top are also absolutely INSANE.
This soup is always on repeat in the fall! It also always makes it’s way to my Thanksgiving table. Such a great starter!
Another VIRAL one. This Broccoli Cheddar Soup is way cleaner than 99% of the recipes out there on the internet, but it tastes just as good (if not better).
A super hearty soup that has tons of hidden cauliflower! You can’t even taste it and it is the perfect way to add in more nutrients and less carbs. Don’t skip the bacon PLEASE.
Another one of my FAVS! I love how filling and hearty this soup is. Adding a scoop of Greek yogurt or sour cream on top really makes it!
This one doesn’t need an introduction. The most VIRAL soup recipe ever. It is PERFECTION.
This is basically Chicken Noodle Soup except instead of noodles I made these delicious, doughy, gluten-free dumplings! It will not disappoint.
Whenever I go to a Mexican restaurant I will always order the Chicken Tortilla soup to start and then get too full to eat my dinner. A vicious cycle. I can’t help it though it is one of my favorite soups EVER. This recipe is extra delicious because I blend up tortilla chips with the soup to make it thick and extra tasty!
I have quite a few chili recipes, but this vegan version might be my favorite! It is so hearty with the sweet potatoes and quinoa, so you won’t even miss the meat. Don’t skip the toppings!!
Happy slurping! xx
