Going to be vulnerable af for a minute but damn, coming home from a trip to my apartment ALONE for the first time was really hard. I was feeling so lonely, anxious and just flat out sad. I didn’t want to cook, almost ordered grocery delivery because I didn’t want to get off my couch but I pulled my shit together, went to the store, meditated and got my ass in the kitchen and I feel SO MUCH BETTER. Cooking is so much more to me than food. It’s a way for me to zone out and be creative and I’m super blessed I get to share my creations and my life with all of you ♥️ Also wanted to let you know that it’s ok to be sad, healing isn’t a linear process and don’t forget to do what makes you happy. Anyway, enjoy these Eggplant Pizzas – they are freaking BOMB!!!!

Ingredients
- 1 large eggplant
- 1 tbsp olive oil
- salt & pepper
- pizza sauce
- toppings (cheese, pepperoni, basil, etc)
Instructions
- Preheat oven to 400 degrees.
- Cut the top off your eggplant and cut longways. Brush each side with olive oil and season with salt and pepper. Bake 10 minutes then flip, add your toppings and bake for another 10.
- I did marinara, mozzarella, nitrate/antibiotic free salami, pesto and fresh basil.
