Ingredients
- 4 slices of sourdough bread
- 4 tbsp room temperature salted butter
- 2 oz sharp white cheddar freshly grated
- 2 oz sharp yellow cheddar freshly grated
- 2 oz gruyere cheese freshly grated
- Hot honey to drizzle
- Fresh thyme and flakey salt to finish
Instructions
- Heat a skillet over medium low heat. Butter each piece of bread with about 1/2- 1 tbsp of butter on both sides (don’t be shy!).
- Add 1 slice of bread to the pan and cook on one side until golden, about 1-2 minutes. Set aside. For the next piece of bread, repeat the step then flip and add the cheese on the golden brown side while the other side browns.
- Add the other piece of bread, golden side down on the cheese, and cook for about 2 minutes until golden brown. Flip the sandwich and continue cooking until cheese is melted and the other side is golden brown, about 2 more minutes. Set the sandwich aside and repeat for the next sandwich.
- Finish with some flakey sea salt and fresh thyme leaves and a generous drizzle of hot honey to taste.
